The Hosting Chef
Elisabetta was born and raised in Rome to a father from Naples and a mother from Tuscany. Both countries are known for excellent cuisine. She’s traveled and lived in many countries as a diplomat’s wife exposing her to cultures and languages giving her a flair for sophisticated, international entertaining.
As we were getting to know one another, Elisabetta shared that she enjoys being in the kitchen because she can focus on a happy place. Making good food is relaxing for her as well. I commented that my food turns out depending on the mood I’m in..luckily I love cooking and frequently play my playlist from SoundCloud or Spotify. It’s all good from there.
We also discovered that we had a mutual friend in common. Another Italian! I knew then that the evening would be a success and talk about a small world.

I’m all about unique experiences because when I grow old I want to tell my grandchildren and greatgrandchildren lots of fantastic stories, hopefully inspiring them to be free-spirited and explore what life will offer them. Cozymeal’s invite to a private cooking with a chef just got added to my list of stories! Cooking an authentic Italian dinner complete with dessert by a private Italian chef was a first for me, hopefully not a last.
Upon arrival, I was greeted and at the door by Chef Elisabetta welcomed into her home.
The Menu: Authentic Italian Favorites Branzino + Risotto + Pannacotta
All ingredients were fresh and had been prepped to make the most of our time. We started with the last dish first, the Pannacotta. This order was chosen to let the creamy delight have enough time to chill and firm in the freezer. Normally you can prepare it the day before in the fridge. I can’t disclose the recipe for the butter, sugar and cream ensemble, but trust me it was good! Don’t pass it up if it’s ever offered to you.
Fresh vegetables were one of the side dishes. We blended chopped asparagus, zucchini, carrots, red bell peppers, and shallots, drizzled with olive oil and salt and roasted them in the oven.
The fish was Branzino. It’s a European bass and is primarily an ocean-go to fish native to the waters of Europe’s western and southern and Africa’s northern coasts. Elisabetta had generously cleaned the fish (thank goodness b/c I just couldn’t have done it), she instructed me to simply drizzle olive oil, salt inside and add lemon slices to my liking. I’ll admit, I wanted extra seasonings but decided to follow her lead and I’m happy I did. The fish was so flavorful and delicate. It was perfect. It is my best to date!
The Risotto was a first for me. I’ve cooked rice dishes before but only with a pot of atleast two cups of water. With Risotto I learned the proper way to prepare it, the way the Italians intended. We started with chopped asparagus and then shallots both sauteed in olive oil later adding white wine, Aroborio (Italian short-grain rice), organic chicken broth until it’s consistency was al dente (firm, soft to bite.) I stirred it over a low/medium temp for about 25 minutes added the asparagus bits, butter and freshly grated parmesan cheese. I couldn’t wait to taste it!
